What is the name of the red dye in blackberry juice?

Has any one noticed that it changes colour to blue when diluted ?

Presumably it can be used a pH (acid/alkali) indicator.

It is an anthocyanin, it is an acid base indicator. The blue color would be from the alkaline tap water. It would be called a pigment, not dye. It is responsible for the reds, blues and purples in flowers and fruits and leaves.
